This is an old family recipe I dreamed up earlier tonight… based on recollection of a cooking show I saw some time ago.
1 egg white
3 cups walnuts
1/4 tsp cinnamon
1/2 tsp cardamom powder
1/2 tsp cayenne pepper
1/2 tsp cumin powder
1/4 tsp salt
1/4 tsp soy sauce
1/4 cup suger + 1 Tbsp brown sugar
Preheat oven to 250 F. Line a large baking sheet with wax / parchment paper.
Mix dry ingredients in a small bowl (everything but nuts)
Mix egg white with soy sauce in a large bowl
Pour nuts into egg white, stir and fold until nuts are covered. Then pour dry ingredients over nuts. Again, fold and stir until thoroughly covered.
Spread onto the baking pan evenly, in a single-nut layer. Put in oven for 45-50 minutes.
Let cool; break apart before putting into a dish. Enjoy.
